<li class="ingredient">4 green chilies (or 7 oz can)</li>
<li class="ingredient">½ cup ground oats (or breadcrumbs)</li>
<li class="ingredient">1 egg</li>
<li class="ingredient">1 tsp Mexican oregano</li>
<li class="ingredient">1 tsp garlic powder</li>
<li class="ingredient">½ tsp kosher salt</li>
<li class="ingredient">½ tsp cumin</li>
<li class="ingredient">1 (16 oz) package Pepper Jack cheese Sticks (See Note 1)</li>
<li class="ingredient">2½ cups Tomatillo Sauce or Salsa</li>
</ul>

<li class="instruction">Preheat oven to 450°F.</li>
<li class="instruction">In a mixing bowl add the ground turkey, green chilies, ground oats (or bread crumbs), egg, Mexican oregano, garlic powder, salt and cumin. Mix thoroughly with your hands.</li>
<li class="instruction">Next, cut 4 cheese sticks into 16 cubes, about ½ inch in size. Press each cheese cube into the scoop with turkey mixture and then mold the meat mixture around to completely cover the chili/cheese cube.</li>
<li class="instruction">Place the meatballs in a greased 9&#215;9&#8243; baking pan. Pour the tomatillo sauce over the meatballs and then cover with aluminum foil to seal. Reduce oven temperature to 350°F and bake for 30 minutes with the last 5 minutes uncovered.</li>
<li class="instruction">NOTES</li>
<li class="instruction">cut 4 cheese sticks into 16 cubes, about ½ inch in size. Press each cheese cube into the scoop with turkey mixture and then mold the meat mixture around to completely cover the chili/cheese cube. The cheese I get is a 16 oz bag, like string cheese sticks. I like to use Pepper Jack Cheese ones. If you can&#8217;t find them, use a block of cheese and cut into ½&#8221; cubes. Save remaining cheese sticks for other use.</li>

<li class="ingredient">½ green bell pepper, seeded and cut into cubes</li>
<li class="ingredient">½ red bell pepper, seeded and cut into cubes</li>
<li class="ingredient">2 tablespoons curry powder</li>
<li class="ingredient">salt to taste</li>

<li class="instruction">In a pot over medium heat, heat oil. Add potatoes and cook for about 3 to 4 minutes or until lightly browned and tender. Remove from pan and drain on paper towels. Add carrots and cook for about 1 to 2 minutes. Remove from pan and drain on paper towels.</li>
<li class="instruction">Remove excess oil from pot, leaving about 1 tablespoon. Add onions and garlic and cook until limp and aromatic. Add chicken and cook, stirring occasionally, for about 7 to 8 minutes or until chicken changes color and juices run clear. Add fish sauce and continue to cook for about 2 to 3 minutes.</li>
<li class="instruction">Add coconut milk and water. Bring to a simmer. Lower heat, cover and continue to cook for about 25 to 30 minutes or until chicken is fully cooked. Add potatoes and carrots and cook for about 3 to 5 minutes or until fork-tender.</li>
<li class="instruction">Add curry powder and cook, stirring to combine, for about 3 to 5 minutes or until sauce starts to thicken. Season with salt to taste. Add bell peppers and cook for about 1 minute or until tender yet crisp. Serve hot.</li>
